Ingredients
  

Tart Crust
  • 1.25 cups all-purpose flour
  • 0.5 cup unsalted butter cold and cubed
  • 2 tbsp granulated sugar
  • 0.25 tsp salt
Almond Filling
  • 1 cup almond flour
  • 0.33 cup granulated sugar
  • 6 tbsp unsalted butter softened
  • 1 egg large
  • 1 tsp vanilla extract
Topping
  • 10 fresh apricots sliced
  • 2 tbsp apricot jam
  • 0.25 cup sliced almonds

Method
 

  1. Prepare and chill the tart dough.
  2. Roll dough into tart pan and chill again.
  3. Mix almond filling ingredients until smooth.
  4. Spread filling into crust and arrange apricots decoratively.
  5. Bake until golden and set.
  6. Brush with apricot glaze and cool before serving.

Notes

For best flavor, use ripe but firm apricots and allow the tart to cool completely before slicing.
