Ingredients
  

Semolina Pudding
  • 4 cups whole milk
  • 1/2 cup fine semolina
  • 1/3 cup granulated sugar
  • 1 tbsp honey
  • 1 vanilla bean or 2 tsp vanilla extract
  • 2 tbsp unsalted butter
  • 1 pinch salt
Apricot Topping
  • 6 ripe apricots diced
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp water

Method
 

  1. Cook apricots with honey, lemon juice, and water until soft and syrupy.
  2. Warm milk with sugar, vanilla, and salt in a saucepan.
  3. Whisk in semolina gradually and cook until thickened.
  4. Stir in butter until melted and smooth.
  5. Fold most of the apricot mixture into the pudding.
  6. Transfer to serving bowls and top with remaining apricots.
  7. Chill for at least 2 hours before serving.

Notes

Use ripe apricots for the best flavor and stir continuously while cooking the semolina for a silky texture.
