Lemon Cake
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tablespoons lemon zest
  • 0.25 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 0.75 cup whole milk
  • 1 cup fresh blackberries lightly floured
Blackberry Glaze
  • 1 cup fresh blackberries
  • 2 tablespoons water
  • 1.5 cups powdered sugar
  • 2 tablespoons milk as needed

Method
 

  1. Preheat oven to 350°F and prepare a loaf pan with parchment paper.
  2. Whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy, then mix in eggs, lemon zest, juice, and vanilla.
  4. Alternate adding dry ingredients and milk until combined.
  5. Fold in blackberries and pour batter into the loaf pan.
  6. Bake for 50–60 minutes until golden and cooked through.
  7. Prepare lemon drizzle and spoon over warm cake.
  8. Cook blackberries with water, strain, and mix with powdered sugar for glaze.
  9. Pour glaze over cooled cake and garnish before serving.
