Method
- Preheat oven to 400°F and line baking sheets with parchment paper.
- Mix cream cheese, sugar, lemon zest, lemon juice and vanilla until smooth.
- Combine blueberries, sugar, cornstarch and lemon juice.
- Cut puff pastry into squares and score borders.
- Add lemon cream filling and blueberries to centers.
- Brush edges with egg wash and bake 18–22 minutes.
- Cool slightly and drizzle with lemon glaze before serving.
Notes
Keep puff pastry cold for maximum flakiness and use fresh lemon for the brightest flavor.
