Ingredients
  

Fruit Filling
  • 5 cups fresh peaches sliced
  • 2 cups fresh blueberries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
Crisp Topping
  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter melted

Method
 

  1. Preheat oven to 375°F and grease a baking dish.
  2. Mix peaches, blueberries, sugar, cornstarch, lemon juice, and vanilla.
  3. Transfer fruit to baking dish.
  4. Combine topping ingredients until crumbly.
  5. Sprinkle topping over fruit.
  6. Bake for 40-45 minutes until golden and bubbling.
  7. Cool 15 minutes and serve.

Notes

For extra crunch, chill the topping mixture before baking.
