Ingredients
  

Cookie Dough
  • 1 cup unsalted butter for browning
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp sea salt
  • 1.25 cups fresh raspberries
  • 1/2 cup white chocolate chips optional
Finishing
  • flaky sea salt for garnish

Method
 

  1. Brown the butter until amber and nutty, then cool.
  2. Mix sugars, eggs, vanilla, and brown butter together.
  3. Add dry ingredients and mix into a dough.
  4. Fold in raspberries and white chocolate chips.
  5. Chill dough for 45 minutes.
  6. Bake at 350°F (175°C) for 11–13 minutes.

Notes

Do not overbake. Slightly soft centers create the perfect chewy texture.
