- Wash and halve the peaches, removing the pits carefully.
- Mix melted butter, honey, cinnamon, vanilla, and sea salt in a small bowl.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Brush the peaches with the honey butter mixture.
- Grill peaches cut-side down for 4–5 minutes until caramelized.
- Flip and grill another 2–3 minutes until tender.
- Drizzle with remaining warm honey mixture and top with pistachios and mint before serving.
Notes
Serve immediately with vanilla ice cream for the best flavor and texture contrast.
