Method
- Cook cherries, sugar, cornstarch and lemon juice until thickened, then cool completely.
- Mix almond filling ingredients until smooth and creamy.
- Spread fillings over puff pastry sheets, roll into logs, chill and slice.
- Brush with egg wash, sprinkle with almonds and bake at 375°F for 20–25 minutes.
- Cool slightly and dust with powdered sugar before serving.
Notes
For the flakiest texture, keep puff pastry chilled throughout preparation.
