Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1/2 cup creamy almond butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried sweet cherries roughly chopped
  • 3/4 cup sliced almonds toasted
  • 1/2 cup white chocolate chips optional

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter, almond butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in eggs, vanilla extract, and almond extract.
  4. Whisk together flour, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Fold in dried cherries, toasted almonds, and white chocolate chips.
  7. Scoop dough onto baking sheets spaced 2 inches apart.
  8. Bake for 11–13 minutes until edges are golden and centers remain soft.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

For thicker bakery-style cookies, chill the dough for 30 minutes before baking.
