- Cook cherries, maple syrup, and lemon juice until softened. Cool completely.
- Whisk milk, maple syrup, vanilla, and chia seeds together.
- Rest 5 minutes and whisk again.
- Refrigerate for at least 4 hours or overnight.
- Layer pudding and cherries in serving glasses.
- Garnish and serve chilled.
Notes
For the creamiest texture, refrigerate overnight and stir twice during the first 10 minutes.
