Ingredients
  

Vanilla Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups milk any variety
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp vanilla bean paste optional
Cherry Layer
  • 2 cups fresh cherries pitted and chopped
  • 1 tbsp maple syrup
  • 1 tsp lemon juice

Method
 

  1. Cook cherries, maple syrup, and lemon juice until softened. Cool completely.
  2. Whisk milk, maple syrup, vanilla, and chia seeds together.
  3. Rest 5 minutes and whisk again.
  4. Refrigerate for at least 4 hours or overnight.
  5. Layer pudding and cherries in serving glasses.
  6. Garnish and serve chilled.

Notes

For the creamiest texture, refrigerate overnight and stir twice during the first 10 minutes.
