Ingredients
  

Salad Base
  • 2 cups chickpeas cooked or canned
  • 2 avocados diced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion finely chopped
  • 1/4 cup parsley chopped
Dressing
  • 2 tbsp olive oil
  • 1 lemon juiced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Rinse and drain chickpeas, then place in a large bowl.
  2. Add chopped vegetables and avocado to the bowl.
  3. Whisk dressing ingredients and pour over salad, then toss gently and serve.

Notes

Add avocado just before serving to keep it fresh and prevent browning.
