Ingredients
  

Biscuit Crust
  • 2 cups crushed digestive biscuits or graham crackers
  • 1/2 cup unsalted butter melted
  • 2 tablespoons brown sugar
  • 1 pinch salt
Coconut Filling
  • 8 oz cream cheese softened
  • 1 can sweetened condensed milk
  • 1 cup full-fat coconut milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped cream
  • 1 cup shredded coconut sweetened
Topping
  • 1/2 cup toasted coconut flakes

Equipment

Method
 

  1. Line an 8x8-inch baking pan with parchment paper.
  2. Mix crushed biscuits, melted butter, brown sugar, and salt. Press firmly into the pan and chill.
  3. Beat cream cheese until smooth, then mix in condensed milk, coconut milk, vanilla, and powdered sugar.
  4. Fold whipped cream and shredded coconut into the filling.
  5. Spread filling over crust and top with toasted coconut.
  6. Refrigerate for at least 6 hours or overnight before slicing.

Notes

For the cleanest slices, chill overnight and wipe the knife between cuts.
