Ingredients
  

Mango Coconut Filling
  • 1 cup ripe mango chunks finely diced
  • 1 1/2 cups unsweetened shredded coconut
  • 3 tablespoons coconut cream
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt
Chocolate Coating
  • 2 cups dark chocolate chopped
  • 1 tablespoon coconut oil

Equipment

Method
 

  1. Blend the mango chunks into a thick puree.
  2. Mix mango puree with coconut, coconut cream, honey, vanilla, and salt until thick.
  3. Chill the mixture for 20 minutes.
  4. Roll into bite-sized balls and freeze briefly.
  5. Melt dark chocolate with coconut oil until smooth.
  6. Dip chilled truffles into melted chocolate and place on parchment paper.
  7. Add toppings and refrigerate until firm.

Notes

Use ripe mangoes for maximum sweetness and tropical flavor.
