Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sweetened shredded coconut
  • 1 1/2 cups white chocolate chunks
Optional Topping
  • 1 pinch flaky sea salt for garnish

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs and vanilla extract, mixing until smooth.
  4. Whisk flour, baking soda, baking powder, and salt together in a separate bowl.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Fold in shredded coconut and white chocolate chunks.
  7. Scoop dough onto prepared baking sheets.
  8. Bake for 11 to 14 minutes until edges are lightly golden.
  9. Cool for 5 minutes before transferring to a wire rack.

Notes

For extra flavor, toast some of the coconut before mixing into the dough.
