Shortbread Crust
  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
Lemon Filling
  • 1 1/2 cups granulated sugar
  • 4 eggs
  • 2/3 cup lemon juice fresh

Method
 

  1. Preheat oven to 350°F and prepare a lined baking dish.
  2. Mix crust ingredients, press into pan, and bake until golden.
  3. Whisk filling ingredients, pour over crust, bake again, then cool and chill before slicing.
