Ingredients
  

Custard Base
  • 2 cups heavy cream
  • 5 egg yolks
  • 1/2 cup granulated sugar
  • 1 vanilla bean or extract
  • 1 pinch salt
Topping
  • extra sugar for caramelizing

Method
 

  1. Preheat oven to 325°F (160°C) and heat cream with vanilla until just simmering.
  2. Whisk egg yolks, sugar, and salt, then slowly add warm cream while whisking.
  3. Pour into ramekins, bake in water bath for 30–40 minutes, chill, then caramelize sugar topping before serving.

Notes

For best results, chill thoroughly and torch sugar just before serving.
