  • 3 ripe bananas diced
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • vegetable oil for frying

Method
 

  1. Whisk together flour, sugar, baking powder, cinnamon, and salt in a bowl.
  2. In another bowl, whisk egg, milk, and vanilla extract until smooth.
  3. Combine wet and dry ingredients to form a thick batter.
  4. Fold diced bananas into the batter gently.
  5. Heat vegetable oil in a deep skillet to 350°F.
  6. Drop spoonfuls of batter into the hot oil and fry until golden brown.
  7. Drain on paper towels and serve warm with desired toppings.
