Ingredients
  

Fritter Batter
  • 2 cups fresh pineapple chunks finely diced and patted dry
  • 1 cup sweetened shredded coconut
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter

  • powdered sugar for dusting

Method
 

  1. Pat diced pineapple dry thoroughly with paper towels.
  2. Whisk together flour, cornstarch, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk eggs, coconut milk, vanilla, and melted butter.
  4. Combine wet and dry ingredients, then fold in pineapple and coconut.
  5. Heat oil to 350°F in a deep skillet.
  6. Drop spoonfuls of batter into oil and fry until golden brown on both sides.
  7. Drain on paper towels and serve warm with toppings.

For extra crispiness, keep oil temperature steady and avoid overcrowding the pan.
