Ingredients
  

Main Component
  • 3 zucchinis cut into sticks
  • 1 cup breadcrumbs panko preferred
  • 1/2 cup Parmesan cheese grated
  • 2 eggs beaten
  • 1/2 cup flour
Seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Cut zucchini into sticks and pat dry thoroughly.
  3. Coat zucchini in flour, dip in egg, then coat with breadcrumb and Parmesan mixture.
  4. Place on baking sheet, spray lightly with oil, and bake for 20–25 minutes, flipping halfway.

Notes

For extra crispiness, use panko breadcrumbs and avoid overcrowding the baking tray.
