Method
- Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Cut zucchini into sticks and pat dry thoroughly.
- Coat zucchini in flour, dip in egg, then coat with breadcrumb and Parmesan mixture.
- Place on baking sheet, spray lightly with oil, and bake for 20–25 minutes, flipping halfway.
Notes
For extra crispiness, use panko breadcrumbs and avoid overcrowding the baking tray.
