Ingredients
  

Dragon Fruit Layer
  • 2 cups pink dragon fruit cubed
  • 1 tablespoon lime juice fresh
  • 2 tablespoons honey or maple syrup
  • 1/4 cup coconut water
Coconut Cream Layer
  • 1 can full-fat coconut milk
  • 2 tablespoons agave syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened shredded coconut

Method
 

  1. Blend dragon fruit, lime juice, honey, and coconut water until smooth.
  2. Whisk coconut milk, agave syrup, vanilla, and shredded coconut together in a bowl.
  3. Alternate layers of dragon fruit puree and coconut mixture into popsicle molds and swirl gently.
  4. Insert popsicle sticks and freeze for at least 6 hours or overnight.
  5. Run molds under warm water briefly before serving.

Notes

Use full-fat coconut milk for the creamiest texture and brightest tropical flavor.
