- Blend dragon fruit, lime juice, honey, and coconut water until smooth.
- Whisk coconut milk, agave syrup, vanilla, and shredded coconut together in a bowl.
- Alternate layers of dragon fruit puree and coconut mixture into popsicle molds and swirl gently.
- Insert popsicle sticks and freeze for at least 6 hours or overnight.
- Run molds under warm water briefly before serving.
