  • 2 flour tortillas
  • 1 cup shredded cheese
  • 1 tbsp butter or oil
  • salt to taste
  • black pepper to taste

Method
 

  1. Whisk eggs with salt and pepper in a bowl.
  2. Cook eggs in a skillet with butter until soft and fluffy.
  3. Layer tortilla, cheese, eggs, and more cheese, then top with another tortilla.
  4. Cook until tortillas are golden and cheese is melted, flipping once.
  5. Slice and serve warm.

Notes

Use medium heat and avoid overfilling for best results.
