- Whisk egg whites, sugar, vanilla, and salt until frothy.
- Fold in coconut until evenly coated.
- Scoop small mounds onto baking sheet.

- Cool completely and drizzle with chocolate if desired.
Notes
For extra flavor, add a pinch of almond extract along with vanilla.
