Ingredients
  

Main Candy Base
  • 2 cups white sesame seeds toasted
  • 1 cup mixed nuts roughly chopped
  • 1 cup honey
  • 3/4 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon baking soda
Optional Garnishes
  • flaky sea salt for topping

Method
 

  1. Line a square baking pan with parchment paper and lightly grease it.
  2. Toast sesame seeds in a dry skillet until lightly golden and fragrant.
  3. Toast chopped nuts separately for extra flavor.
  4. Combine honey, sugar, butter, and salt in a saucepan and simmer until golden amber.
  5. Remove from heat and stir in vanilla extract and baking soda.
  6. Quickly mix in toasted sesame seeds and nuts until evenly coated.
  7. Spread the mixture evenly into the prepared pan.
  8. Cool slightly, cut into squares, and let fully harden before serving.

Notes

For the crispiest texture, avoid humid environments while making the candy.
