Ingredients
  

Biscuit Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
Optional Lemon Glaze
  • 1 cup powdered sugar
  • 1 1/2 tablespoons fresh lemon juice

Method
 

  1. Cream butter and sugar together until light and fluffy.
  2. Mix in egg, lemon zest, lemon juice, and vanilla extract.
  3. Whisk flour, poppy seeds, baking powder, and salt together separately.
  4. Combine wet and dry ingredients until a soft dough forms.
  5. Wrap dough and refrigerate for 45 minutes.
  6. Roll dough thinly and cut into desired shapes.
  7. Bake at 350°F for 10–12 minutes until edges are golden.
  8. Cool completely before serving or glazing.

Notes

For extra crispness, roll the dough as thin as possible and allow biscuits to cool fully before storing.
