Ingredients
  

Cookie Dough
  • 1 cup creamy almond butter
  • 1/2 cup honey
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 3/4 cup chopped roasted almonds
Topping
  • 2 tbsp honey for drizzling
  • 2 tbsp sliced almonds for garnish

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Mix almond butter, honey, brown sugar, egg, and vanilla until smooth.
  3. Whisk flour, baking soda, and salt separately.
  4. Combine wet and dry ingredients and fold in chopped almonds.
  5. Shape dough into balls and place on prepared baking sheets.
  6. Top with sliced almonds and gently press into dough.
  7. Bake for 10–12 minutes until lightly golden.
  8. Cool slightly and drizzle with honey before serving.

Notes

Toast almonds before mixing for maximum flavor and crunch.
