Cake Batter
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1 cup Greek yogurt
  • 1/3 cup honey
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 ripe peaches diced
Honey Glaze
  • 3 tablespoons honey
  • 1 tablespoon warm water
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and prepare a 9-inch cake pan.
  2. Whisk dry ingredients together in a bowl.
  3. Mix wet ingredients until smooth.
  4. Combine wet and dry ingredients gently.
  5. Fold diced peaches into the batter.
  6. Transfer batter to pan and bake for 40-45 minutes.
  7. Cool slightly and brush with honey glaze.
  8. Garnish and serve.

Notes

For best flavor, use ripe seasonal peaches and full-fat Greek yogurt.
