Ingredients
  

Honey Toffee Base
  • 2 cups whole almonds roasted
  • 1/2 cup honey
  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
Optional Finishing
  • 1/4 tsp flaky sea salt
  • 1/2 cup dark chocolate melted

Equipment

  • heavy-bottomed saucepan
  • silicone spatula
  • baking sheet

Method
 

  1. Roast almonds at 350°F for 8 to 10 minutes.
  2. Cook butter, sugars, honey, and salt until deep amber and caramelized.
  3. Remove from heat and stir in vanilla and baking soda.
  4. Mix in roasted almonds until evenly coated.
  5. Spread onto prepared baking sheet and cool completely.
  6. Break into clusters and serve.

Notes

For best flavor, use freshly roasted almonds and finish with flaky sea salt.
