- Roast almonds at 350°F for 8 to 10 minutes.
- Cook butter, sugars, honey, and salt until deep amber and caramelized.
- Remove from heat and stir in vanilla and baking soda.
- Mix in roasted almonds until evenly coated.
- Spread onto prepared baking sheet and cool completely.
- Break into clusters and serve.
Notes
For best flavor, use freshly roasted almonds and finish with flaky sea salt.
