Ingredients
  

Rice Pudding Base
  • 1 cup short-grain white rice rinsed
  • 4 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup honey
  • 1/4 cup granulated sugar
  • 1 vanilla bean split and scraped
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon salt
Optional Toppings
  • extra honey for drizzling
  • ground cinnamon

Equipment

Method
 

  1. Rinse the rice under cool water and drain well.
  2. Heat milk, cream, cinnamon stick, salt, and vanilla bean in a saucepan over medium-low heat.
  3. Add rice and simmer gently for 35–45 minutes, stirring frequently.
  4. Stir in honey, sugar, butter, and vanilla extract until fully combined.
  5. Remove cinnamon stick and vanilla bean pod.
  6. Transfer to bowls and chill for at least 3 hours.
  7. Serve chilled with extra honey and cinnamon.

Notes

For the creamiest texture, use short-grain rice and cook slowly over low heat.
