Ingredients
  

Granita Base
  • 6 cups honeydew melon cubed
  • 1/3 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 tbsp lime zest
  • 1/4 cup water
  • 6 mint leaves fresh
  • 1 pinch sea salt
Optional Garnishes
  • mint sprigs
  • melon cubes

Equipment

Method
 

  1. Blend honeydew melon, sugar, lime juice, lime zest, mint, water, and salt until smooth.
  2. Pour mixture into a shallow baking dish and freeze uncovered for 30–40 minutes.
  3. Scrape frozen portions with a fork every 30 minutes until fluffy crystals form throughout.
  4. Serve immediately in chilled bowls with mint and melon garnish.

Notes

For best texture, scrape thoroughly during freezing and use fully ripe melon.
