Ingredients
  

Cake Batter
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup unsalted butter softened
  • 1.75 cups granulated sugar
  • 4 eggs room temperature
  • 0.5 cup key lime juice fresh
  • 1 cup coconut milk full-fat
Coconut Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 0.25 cup coconut milk

Method
 

  1. Preheat oven to 350°F and prepare two cake pans.
  2. Mix dry ingredients and set aside.
  3. Cream butter and sugar until fluffy.
  4. Add eggs, lime zest, lime juice, and vanilla.
  5. Alternate dry ingredients with coconut milk.
  6. Bake 28-32 minutes and cool completely.
  7. Prepare frosting and assemble cake layers.
  8. Decorate with toasted coconut and lime zest.

Notes

For maximum flavor, use freshly squeezed key lime juice and toasted coconut.
