Ingredients
  

Sweet Rice Base
  • 1 cup sweet rice glutinous rice
  • 8 cups water
  • 1 cup malted barley powder yeotgireum
  • 3/4 cup granulated sugar
  • 2 tbsp pine nuts for garnish
Serving
  • ice cubes as needed

Equipment

  • large saucepan
  • fine mesh strainer
  • mixing bowl

Method
 

  1. Rinse, soak, and cook the sweet rice until tender.
  2. Mix malted barley powder with water, settle, and strain.
  3. Combine strained malt water with cooked rice and maintain warm temperature until rice grains float.
  4. Strain, sweeten, and simmer the liquid.
  5. Cool completely and refrigerate.
  6. Serve chilled with rice grains, pine nuts, and ice.

Notes

For the most authentic flavor, use traditional Korean malted barley powder and allow the beverage to chill overnight before serving.
