Cake Batter
  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup sugar
  • 2 eggs
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 0.5 cup milk
  • 1.5 cups blueberries
Lemon Glaze
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Method
 

  1. Preheat oven to 175°C (350°F) and prepare baking pan.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar, add eggs, lemon zest, and juice.
  4. Alternate adding dry ingredients and milk.
  5. Fold in blueberries and pour batter into pan.
  6. Bake for 40–50 minutes until done.

Notes

Use fresh lemons for best flavor and coat blueberries in flour to prevent sinking.
