Ingredients
  

Brioche Dough
  • 4 cups all-purpose flour
  • 2.25 teaspoons active dry yeast
  • 0.25 cup granulated sugar
  • 1 teaspoon salt
  • 0.75 cup whole milk warm
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 0.5 cup unsalted butter softened
Raspberry Filling
  • 2 cups fresh raspberries
  • 0.33 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
Lemon Glaze
  • 1.5 cups powdered sugar
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Method
 

  1. Activate yeast in warm milk and sugar.
  2. Mix dough ingredients and knead until smooth.
  3. Let dough rise until doubled.
  4. Cook raspberry filling and cool completely.
  5. Roll dough into a rectangle and spread filling.
  6. Roll tightly and slice into 12 swirls.
  7. Arrange in baking dish and rise again.
  8. Bake until golden brown.
  9. Prepare lemon glaze and drizzle over warm rolls.

Notes

For best flavor, use freshly grated lemon zest and ripe raspberries.
