Ingredients
  

Coconut Chia Pudding
  • 1.75 cups full-fat coconut milk
  • 0.5 cup chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
Mango Layer
  • 2 large ripe mangoes peeled and diced
  • 1 tbsp lime juice
  • 1 tbsp maple syrup optional

Method
 

  1. Whisk together coconut milk, maple syrup, vanilla, and salt.
  2. Stir in chia seeds and let sit for 10 minutes before stirring again.
  3. Refrigerate for at least 4 hours or overnight.
  4. Blend mangoes, lime juice, and optional maple syrup until smooth.
  5. Layer chia pudding and mango puree in serving glasses.
  6. Chill 30 minutes, garnish, and serve.

Notes

Use very ripe mangoes and full-fat coconut milk for the best flavor and texture.
