Ingredients
  

Fritter Batter
  • 2 cups ripe mango finely diced
  • 1 cup shredded coconut sweetened
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
Optional Toppings
  • powdered sugar
  • toasted coconut flakes

Equipment

Method
 

  1. Whisk together flour, sugar, baking powder and salt.
  2. Mix eggs, milk, vanilla and butter in a separate bowl.
  3. Combine wet and dry ingredients, then fold in mango and coconut.
  4. Heat oil to 350°F and fry spoonfuls of batter until golden brown.
  5. Drain on paper towels and garnish before serving.

Notes

For maximum flavor, use very ripe mangoes and serve warm.
