Ingredients
  

Sago Base
  • 1 cup small sago pearls
  • 6 cups water for cooking
Coconut Mixture
  • 2 cups coconut milk full-fat
  • 1 cup coconut cream
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp lime juice fresh
Mango Layer
  • 4 ripe mangoes 3 diced, 1 pureed

Method
 

  1. Cook the sago pearls in boiling water until mostly translucent.
  2. Drain and rinse thoroughly under cold water.
  3. Whisk together coconut milk, coconut cream, sugar, vanilla, and lime juice.
  4. Blend one mango into puree and stir into the coconut mixture.
  5. Fold in cooked sago and diced mango cubes.
  6. Chill for at least 2 hours before serving.
  7. Garnish with mango cubes and toasted coconut flakes.

Notes

For the best flavor, use very ripe, fragrant mangoes and chill overnight before serving.
