Ingredients
  

Tart Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold and cubed
  • 0.25 cup powdered sugar
  • 1 egg yolk
  • 2 tbsp cold water
Mango Passion Fruit Filling
  • 2 cups mango puree
  • 0.5 cup passion fruit pulp
  • 0.66 cup granulated sugar
  • 3 eggs
  • 2 egg yolks
  • 0.5 cup heavy cream
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

Method
 

  1. Prepare and chill the tart dough.
  2. Blind bake the tart shell until golden.
  3. Cook the mango passion fruit filling until thickened.
  4. Fill the tart shell and smooth the top.
  5. Chill until fully set.
  6. Decorate and serve chilled.

Notes

Use ripe mangoes for maximum sweetness and chill overnight for clean slices.
