Ingredients
  

Sorbet Base
  • 3 large mangoes peeled and diced
  • 4 large peaches peeled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup honey
  • 1/4 cup lime juice freshly squeezed
  • 2 tbsp water
  • 1 tsp lime zest
  • 1 pinch sea salt
Optional Garnishes
  • mint leaves for garnish

Equipment

Method
 

  1. Prepare and chop the mangoes and peaches.
  2. Make a simple syrup by dissolving sugar in water and cool slightly.
  3. Blend fruit, syrup, honey, lime juice, zest, and salt until smooth.
  4. Strain if desired and chill for 2 hours.
  5. Churn in an ice cream maker until thick and creamy.
  6. Freeze for 3 to 4 hours until firm, then serve.

Notes

Use fully ripe fruit for the sweetest flavor and smoothest texture.
