Ingredients
  

Pastry
  • 2 sheets puff pastry thawed
  • 1 large egg for egg wash
  • 1 tbsp water
Vanilla Cream Filling
  • 1 cup whole milk
  • 3 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla bean paste
Mango Topping
  • 2 ripe mangoes diced
  • 1 tbsp lemon juice

Method
 

  1. Prepare and chill the vanilla cream filling.
  2. Mix mangoes with lemon juice and sugar.
  3. Cut and shape puff pastry rectangles.
  4. Fill pastries with vanilla cream and mango mixture.
  5. Brush with egg wash and bake until golden.
  6. Cool, glaze, and serve.

Notes

Keep pastry cold for maximum flakiness and chill the cream thoroughly before assembling.
