- Blend melon, mint, sugar, honey, lime juice, water, and salt until smooth.
- Pour mixture into a shallow dish and freeze for one hour.
- Scrape frozen edges with a fork every 30 minutes until fluffy crystals form.
- Continue freezing and scraping for 3 to 4 hours.
- Serve in chilled glasses and garnish as desired.
Notes
Use very ripe melon for maximum sweetness and scrape frequently for the best crystal texture.
