Ingredients
  

Granita Base
  • 6 cups melon chunks ripe
  • 1/4 cup fresh mint leaves
  • 1/3 cup granulated sugar
  • 2 tbsp honey
  • 2 tbsp lime juice fresh
  • 1/2 cup water cold
  • 1 pinch sea salt
Optional Garnish
  • mint sprigs for serving
  • melon balls for serving

Equipment

  • shallow baking dish

Method
 

  1. Blend melon, mint, sugar, honey, lime juice, water, and salt until smooth.
  2. Pour mixture into a shallow dish and freeze for one hour.
  3. Scrape frozen edges with a fork every 30 minutes until fluffy crystals form.
  4. Continue freezing and scraping for 3 to 4 hours.
  5. Serve in chilled glasses and garnish as desired.

Notes

Use very ripe melon for maximum sweetness and scrape frequently for the best crystal texture.
