Ingredients
  

Panna Cotta Base
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 1/4 tsp gelatin powder
  • 3 tbsp cold water
Passion Fruit Topping
  • 6 passion fruits pulp removed
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Equipment

Method
 

  1. Bloom gelatin in cold water for 5 to 10 minutes.
  2. Heat cream, milk and sugar until sugar dissolves.
  3. Remove from heat and whisk in vanilla and gelatin.
  4. Strain mixture and divide into serving glasses.
  5. Chill for at least 4 hours until set.
  6. Cook passion fruit pulp, sugar and lemon juice for 3 to 5 minutes.
  7. Cool topping completely and spoon over chilled panna cotta.
  8. Garnish and serve cold.

Notes

For the smoothest texture, strain the cream mixture before chilling and allow the dessert to set overnight.
