Ingredients
  

Tart Crust
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 2 tablespoons ice water
  • 1 pinch salt
Vanilla Custard
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 4 egg yolks
  • 1/3 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon vanilla extract
Peach Topping
  • 3 ripe peaches thinly sliced
  • 2 tablespoons apricot jam

Equipment

Method
 

  1. Prepare and chill the tart dough for 30 minutes.
  2. Bake the tart shell until golden brown and cool completely.
  3. Cook the vanilla custard until thick and silky smooth.
  4. Fill the tart shell with cooled custard.
  5. Arrange peach slices on top and glaze lightly with apricot jam.
  6. Chill for at least 2 hours before serving.

Notes

Use ripe fragrant peaches for the best flavor and chill the tart fully before slicing.
