Ingredients
  

Churro Dough
  • 1 cup water
  • 4 tbsp unsalted butter
  • 1 cup all-purpose flour
  • 2 eggs
Filling
  • 1 cup pineapple finely diced
  • 1/2 cup shredded coconut
  • 1 tsp lime zest

Method
 

  1. Cook pineapple filling until slightly thickened and cool completely.
  2. Prepare churro dough and mix in eggs and vanilla.
  3. Fill dough portions with pineapple coconut mixture and freeze briefly.
  4. Fry until golden brown and coat with cinnamon sugar mixture.
  5. Serve warm with coconut cream dip.

Notes

Freeze filled churro bites before frying for the best shape and texture.
