- Soak the tapioca pearls and drain well.
- Heat coconut milk, whole milk, sugar, and salt until warm.
- Cook tapioca pearls in the milk mixture until translucent and thickened.
- Stir in vanilla and lime zest.
- Fold in prepared pineapple mixture.
- Chill or serve warm with toasted coconut garnish.
Notes
For the best flavor, use ripe fresh pineapple and toast the coconut just before serving.
