Ingredients

  • 1.5 cups pitted dates soft
  • 1 cup pistachios shelled
  • 2 tbsp cocoa powder
  • 2 tbsp shredded coconut
  • 1 tbsp honey optional
  • 1 tsp vanilla extract
Coating
  • crushed pistachios
  • cocoa powder

Method
 

  1. Soak dates if needed, then drain well.
  2. Blend pistachios and set aside half for texture.
  3. Blend dates with cocoa, coconut, honey, and vanilla until smooth.
  4. Mix in reserved pistachios and adjust texture with water if needed.
  5. Roll into small balls and coat as desired.
  6. Chill for 20 minutes before serving.

Notes

Use soft Medjool dates for best texture. Store in fridge for freshness.
