Ingredients
  

Apricot Filling
  • 2 lb fresh apricots halved and pitted
  • 1/3 cup light brown sugar
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice fresh
  • 1 vanilla bean seeds scraped
  • 1 tbsp cornstarch
  • 1/4 tsp sea salt
Vanilla Crumble Topping
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 2/3 cup light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1/2 cup unsalted butter cold and cubed
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 375°F and grease a baking dish.
  2. Combine apricot filling ingredients and transfer to baking dish.
  3. Mix crumble ingredients until coarse crumbs form.
  4. Sprinkle topping over apricots.
  5. Bake for 35–40 minutes until golden and bubbly.
  6. Cool for 15 minutes before serving.

Notes

For extra crunch, add sliced almonds to the crumble topping.
