Ingredients
  

Mochi Dough
  • 1 cup sweet rice flour mochiko flour
  • 1/4 cup granulated sugar
  • 3/4 cup water
  • 1 tbsp vegetable oil
  • cornstarch for dusting
Ice Cream Filling
  • 1 pint ice cream any flavor

Equipment

  • microwave-safe bowl
  • spatula
  • ice cream scoop

Method
 

  1. Scoop small balls of ice cream onto a parchment-lined tray and freeze until firm.
  2. Mix sweet rice flour, sugar, and water until smooth. Microwave in intervals until thick and glossy.
  3. Dust a surface with cornstarch and roll out the mochi dough.
  4. Cut circles from the dough and chill briefly.
  5. Wrap each frozen ice cream scoop with mochi dough and seal underneath.
  6. Freeze the finished mochi ice cream balls for at least 2 hours before serving.

Notes

Work quickly while wrapping to prevent melting. Dust generously with cornstarch for easy handling.
