Ingredients
  

Bombolini Dough
  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup whole milk warm
  • 1/3 cup granulated sugar
  • 2 large eggs room temperature
  • 4 tablespoons unsalted butter softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • vegetable oil for frying
Nutella Filling
  • 1 1/2 cups Nutella
  • 2 tablespoons heavy cream optional
Finishing
  • powdered sugar for dusting

Equipment

  • deep heavy-bottomed pot

Method
 

  1. Combine warm milk, sugar, and yeast in a bowl and let sit until foamy.
  2. Mix flour, salt, eggs, butter, vanilla, and yeast mixture into a soft dough and knead until smooth.
  3. Let dough rise until doubled in size, then roll out and cut circles.
  4. Allow shaped bombolini to rise again until puffy.
  5. Fry bombolini in 350°F oil until golden brown on both sides.
  6. Pipe Nutella filling into each doughnut and dust with powdered sugar before serving.

Notes

For extra fluffy bombolini, allow enough proofing time and avoid overheating the frying oil.
