- Bloom the gelatin in water for 5 minutes, then dissolve gently.
- Blend passion fruit pulp, condensed milk, heavy cream, gelatin, lime juice, and sugar until smooth.
- Pour into serving dishes and chill for at least 4 hours.
- Cook topping ingredients until slightly syrupy and cool completely.
- Top mousse with passion fruit syrup and garnish before serving.
