Ingredients
  

Custard Base
  • 2 cups mango puree ripe mangoes
  • 13.5 oz full-fat coconut milk
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
Flavor Additions
  • 1/2 cup shredded coconut unsweetened
  • 1 tbsp lime zest
  • 1 tbsp lime juice fresh

Method
 

  1. Preheat oven to 350°F and prepare an 8-inch baking dish with parchment paper.
  2. Whisk together mango puree, coconut milk, eggs, vanilla, and lime juice.
  3. Add sugar, flours, and salt. Mix until smooth.
  4. Fold in shredded coconut and lime zest.
  5. Pour into baking dish and bake for 40–45 minutes.
  6. Cool completely and refrigerate for at least 3 hours.
  7. Slice into squares and garnish before serving.

Notes

For the smoothest custard texture, strain the batter before baking and chill overnight.
