Method
- Preheat oven to 350°F and prepare an 8-inch baking dish with parchment paper.
- Whisk together mango puree, coconut milk, eggs, vanilla, and lime juice.
- Add sugar, flours, and salt. Mix until smooth.
- Fold in shredded coconut and lime zest.
- Pour into baking dish and bake for 40–45 minutes.
- Cool completely and refrigerate for at least 3 hours.
- Slice into squares and garnish before serving.
Notes
For the smoothest custard texture, strain the batter before baking and chill overnight.
